Recipe: Walnut Potica

Gostilna Dela has collaborated with us to prepare a recipe for a classic Slovenian dessert: walnut potica. Gostilna Dela is a socially responsible hospitality company that provides training and employment to the most vulnerable groups.

Recipe: Walnut Potica

Ingredients for the dough:

  • 500 g flour
  • 40 g yeast (1 cube)
  • 1.5 dl milk
  • 150 g butter
  • 50 g sugar
  • 2 whole eggs
  • 2 egg yolks
  • lemon zest

Ingredients for the filling:

  • 600 g ground walnuts
  • 2 dl hot milk
  • 2-3 egg whites
  • 1 vanilla sugar
  • 100 g raisins
  • 0.5 dl rum
  • 1 dl heavy cream
  • 100 g butter

Ingredients for the glaze:

  • 1 egg yolk
  • 0.5 dl heavy cream


Preparation of the dough:
Sift the flour into a large bowl and crumble the yeast into it.
In a saucepan, heat the milk, butter, and sugar and pour the mixture into the flour.
Add the whole eggs, egg yolks, and lemon zest and knead a smooth dough.
Cover the dough and let it rise until it doubles in volume.


Preparation of the filling: 

Put the walnuts in a bowl and pour the hot milk over them.
Add sugar, vanilla sugar, rum, raisins, melted butter, and heavy cream.
Mix all the ingredients.
Beat the egg whites until stiff peaks form, and gently fold them into the mixture.

 

Preparation process: 

Grease a baking dish with butter and dust with flour.
Roll out the dough to a thickness of 0.5 cm and spread the filling over it.
Roll the dough tightly into a log and place it in the baking dish; let it rise for another 15 minutes.
Pierce the potica to the bottom and brush it with a mixture of egg yolk and heavy cream.
Let the prepared dough rise for another 10 minutes, then place it in a preheated oven at 180°C and bake for 60 minutes.
Cool the baked potica to room temperature and sprinkle it with powdered sugar before serving.
